Fred's sea bass fillets with pesto pasta and peppers

  1. Bring a pan of water to the boil and cook the pasta according to the pack instructions.
  2. Meanwhile, chop the peppers and toast the pine nuts in a dry pan for a few minutes (if not already toasted).
  3. Heat a frying pan with a little oil and add the sea bass fillets skin side down. Cook for 2-3 minutes then carefully turn and cook for a further 2-3 minutes or until cooked through.
  4. When the pasta is cooked, drain then return to the pan. Add the peppers and pine nuts and stir through the pesto. Divide between two plates and top with the sea bass. Scatter over the basil leaves before serving.

Add a few shavings of fresh Parmesan to the pasta if you like it extra cheesy!

  • 1x pack of Fish Said Fred Big Sea Bass Fillets
  • 180g pasta shapes such as twists or tubes
  • 75g roasted peppers (in oil from a jar)
  • 1 tbsp pine nuts, toasted
  • 3 tbsp pesto 
  • Few fresh basil leaves
