Fred’s whole sea bass, roasted with Asian flavours

  1. Peel and cut your ginger into matchsticks along with your spring onions and then slice your red chilli.

  2. Wrap your sea bass in a baking paper parcel and then tinfoil, pour into the parcel the soy and mirin, along with the spring onions, ginger and chillies.

  3. Bake in the oven at 180C for 20-25 mins.

  4. Once removed, carefully unwrap your fish and place on a plate, pouring the sauce over the top. Garnish with the coriander leaf to finish.

This one’s cracking just with some cooked white rice on the side (I like basmati). But if you’re in the mood, why not try it with some cold noodles dressed with chilli oil, toasted sesame seeds and more spring onions?

What you’ll need:

  • 1 pack of Fred’s tremendous whole sea bass
  • 100ml soy sauce
  • 50ml mirin
  • 1 knob of ginger
  • 1 red chilli
  • 5 spring onions
  • 1 lime
  • A few coriander leaves for garnish
